The Flame Boss 500 promises to handle the attention part — it monitors your pit temperature and adjusts a blower fan to maintain your target. In theory, you set your temp, load your meat, and go to bed. In practice, it is about 80% that simple. ## Setup and Installation The Flame Boss 500 consists of a control unit, a variable-speed blower fan, and temperature probes. Installation involves mounting the blower to your smoker's air intake — adapters are included for most popular smokers. The WiFi setup connects to your home network, and the web-based dashboard lets you monitor from anywhere. Setup took me about 30 minutes, and the instructions were clear. The blower adapter fit my Weber Smokey Mountain perfectly. Other smoker models may require more creative mounting. ## How It Performs Once dialed in, the Flame Boss 500 maintains temperature within 5-8 degrees of your target. The PID algorithm learns your smoker's characteristics over a few cooks, getting more precise each time. During a 12-hour overnight pork butt, it held 235F with minimal deviation — I checked the graph in the morning and saw smooth, consistent lines. The variable-speed blower is quieter than I expected but not silent. At 2 AM with the windows open, you can hear it cycling.
